About the Recipe
A surprisingly easy and delicious omelette which tastes incredibly indulgent. We often buy crab meat from the supermarket on the way to Mackerel but our neighbours have been catching crab off the beach by kayaking out and dropping crab pots!
Ingredients
4 eggs
1 teaspoon fish sauce
1 tablespoon of oyster sauce
hand full of coriander leaves
2 small red chillis
2 spring onions
70 grams of crab meat
olive oil
water
Preparation
Thin oyster sauce in small bowl with a tablespoon of water ans set aside
Thinly slice spring onions, mix in a small bowl with crab meat - season with salt and pepper
Chop up coriander and deseed and chop the chilli - set aside
You can make either one big omelette to share or I tend to make seperate omelettes as they are very quick to cook - I will assume 2 separate omelettes.
Lightly beat 2 eggs with 1/2 teaspoon of fish sauce and 2 tablespoons of water.
Heat an omelette pan with a splash of olive oil on high heat.
Place in half of the crab an onions (when hot) lete is sizzle very quickly add egg mixture and with a spatula keep sliding the mixture inwards so that it sets quickly.
Leave to cook and brown for 1 minute then turn out onto plate and spread half of oyster sauce mix, coriander and chopped chilli.
Serve and repeat from 5 with the other half of the mixture and ingredients.
